For the Love of Pizza!

Behold the Fig and Goat Cheese Pizza! This pizza is at the tippy top of my list. The list being a combination of all foods that I love to eat and the ones I love to cook. The simplicity of the recipe means that anyone can make it. All you need is a few ingredients and a lot of love (I'm sure we can find that one somewhere!) This recipe has been featured on my Instagram account about four times now if I'm not mistaken. Every time I post it I get more and more feedback. Once you make this pizza you will see why it is deserving of the title - The Best Thing I've Ever Made.

Since Valentine's Day is around the corner, it's got me thinking of love. Mainly my love of foods because we don't celebrate the V-Day in my house (just the chocolate part). The one thing that will set this pizza apart is the amount of love you put into it. Ladies, it's no secret that when you love someone you want to make them happy. To make them happy you generally need to feed them, three times a day for the rest of their lives (just kidding) (not really). I am quite certain that the more love you put into a dish, the more love you will get out of it. I am also certain that this amount of love equals in amounts of cheese. I know its a sickness but I really do love cheese. Just ask my BFF Gill who gave me an "I Love Cheese" shirt in High School, which I happily wore.

Back to the Pizza! The best thing about this pizza is that every time I make it, it comes out different than the last. It really depends on the type of ingredients you use. As not all ingredients are created equally, your pizza may taste quite different than mine, but delicious none the less. Each time I make it I try to one-up myself from the last time. I added some freshly chopped Rosemary and drizzled some of my leftover Honey Balsamic Reduction this time around. I've also learned that the combination of both the Yellow and Red Onion add more dimension to the pizza than just one variety alone. Don't forget to Salt and Pepper your pizzas as a general rule (always freshly cracked) and always have fun with it. Any way you slice it, it will be delicious. All you need to do is follow this recipe and give it some love. Let's get cooking!

Fig and Goat Cheese Pizza

1 Package of Whole Wheat Pizza Dough
1 Tbs. Extra Virgin Olive Oil, plus more for drizzling
1 Medium Red Onion, sliced
1 Medium Yellow Onion, sliced
8-10 Dried Figs, chopped
6 oz. Goat Cheese
1 Cup Grated Mozzarella Cheese
Freshly Cracked Salt and Pepper
1 Tbs. Fresh Rosemary, chopped
1 Tbs. Honey Balsamic Reduction (optional)

Prepare your Pizza Dough for topping. If you keep your dough in the freezer you can either leave to thaw for about an hour (or more if you have the time). If you are short on time you can microwave it in 30 second increments, which should take about 2 minutes total. Be sure to knead it a bit each time before putting it back in the microwave. Roll out the dough and set aside. In the meantime, heat up the Extra Virgin Olive Oil in a pan and add the sliced Red and Yellow Onion. You want to get these onions nice and caramelized so keep the heat on a medium low. Add some salt to help soften the onions. You can also add a small amount of Sugar or Balsamic Vinegar to help the caramelization process go a bit quicker. Once your dough is rolled out and the onions are soft and caramelized it's time to assemble the pizza. Add the Caramelized Onions to the pizza first. Next add the chopped Figs, both Cheeses and lastly the chopped Rosemary and Balsamic Reduction. Top with a drizzle of Extra Virgin Olive Oil, Salt and Pepper. Bake in a 450 degree oven for 15 minutes or until the top is golden brown and bubbly. Some suggestions for at-the-table toppings are grated Parmesan Cheese, Truffle Oil and Crushed Red Pepper.
