Summer Brussels Sprout Salad

I like to call this my "Summer" Brussels Sprout Salad because it always reminds me of the summer time. Staying by my mother's house in Jersey I had full reign of the kitchen come Saturday lunch. With my siblings as my sous-chefs we knocked out gourmet lunches in no time. This one was definitely a favorite. Most of the ingredients could be found in the fridge and pantry at all times and can always be switched up depending on that weeks supermarket trip. Change the apple for a pear, the almonds for walnuts and it will no doubt always be delicious.

The secret to this recipe though, is my famous dressing. This is the dressing that has husbands and kids alike asking for more salad and more veggies. Score! Kinda like that Hidden Valley Ranch commercial, just a bit more believable. My husband won't touch Romaine without it and my picky little brother calls it the "Lemony Caesar". So for those of you paying attention, you're welcome!

Summer Brussels Sprout Salad

1 Package of Shaved Brussels Sprouts
10 Red Grapes, halved
1 Green Apple, diced small
Handful of Craisins
Handful of Roasted Almonds
1 Avocado, diced

Lemon Caesar Dressing

4 Tbs. Light Mayo
2 Tbs. Dijon Mustard
Juice of 1 Lemon
Freshly Cracked Salt and Pepper
Extra Virgin Olive Oil

Make the dressing by combining first 4 ingredients. Shake well. Drizzle in Extra Virgin Olive Oil until you have a smooth consistency. Taste and adjust as needed.

Mix dressing together with the Brussels Sprouts. Top with remaining ingredients. Toss together before serving. Enjoy!
