Cant Believe Its Cauliflower Pizza!
If you had told me a year ago that I would attempt to make a Cauliflower Crust Pizza, I would not have believed you. If you told me I would love it, I might have told you to Get Out! It sounds just a bit too healthy to be any good. BUT! Passover has had me thinking of anything but Matzoh. Just give me some salvation, please! Who wants to eat Matzo Pizza every day? Not this foodie, that's for sure. So I was perusing Instagram and came across a pizza I've seen time and time again. This time though, I was desperate. Like most of you, I am always searching for new things to make. Since this is the first Passover that I am actually in the kitchen, I need to pull out all the stops, without stopping every one up (you know what I mean...).
Heat your oven to 425 degrees. Line a baking sheet with parchment paper. Grate the Cauliflower using a box grater, or even easier, a food processor! Once you have two cups of cauliflower crumbles in a large glass bowl, cover with plastic wrap and microwave for 7-8 minutes, until soft. Remove and let cool. Mix in the Egg, Mozzarella and Parmesan Cheeses, and Salt and Pepper. Once combined, pat into a square or circle on your prepared pizza pan. Spray lightly with non-stick spray and bake for 20 minutes, or until golden. Next remove from oven and top with 1 thinly sliced Garlic clove, Marinara sauce, Shredded Mozzarella Cheese, julienned Basil and top it off with a drizzle of Extra Virgin Olive Oil and fresh cracked salt and pepper. Return to oven until cheese is golden and bubbly, about 12-14 mins. Enjoy!
When I found out that the creator of this Cauliflower Pizza Crust recipe was written by the one and only Southern Fried, Buttered, and all things Fattening Goddess, Paula Deen, I had to try it for myself. I mean if you're going sans carbs, you might as well do it up big! And the results were amazing. I will not only be making this Pizza on Passover, I may even make it all year round! It's that easy, guilt-free (kinda) and totally delicious! Feel free to top this with anything you wish. This is my classic pizza recipe on a super-food-fabulous Mrs. Paula "Butter" Dean Cauliflower Crust. Can't believe it's this healthy, I may just eat the whole thing! Let's get cooking!

2 ½ cups cauliflower (about ½ a large head)
1 Egg, lightly beaten
1 Cup Shredded Mozzarella
2 Tbs. Grated Parmesan cheese
Freshly Cracked Salt and Pepper
1 Garlic Clove, thinly sliced
Your Favorite Marinara Sauce
Mozzarella Cheese, for topping
1 Tbs. Basil, julienned
