Honey Mustard Salmon with Scallions

Alright you guys. It's summer, like, officially now and bikini season is totally upon us. As much as I love decadent, creamy pastas and crispy, cheesy pizzas, I also love donning a bikini and getting my tan on. Did I just make us both hungry for carbs and cheese on purpose? I apologize. It's a super cheesy curse. Back to the skimpy, summer season. Since the long, hot days of sand and wind are officially here, it's time to shape up. That means eating healthy and exercising! Yay! The best thing to do is find foods that you enjoy eating that are also healthy. If you are eating "diet" foods that you hate, you are more likely to binge on foods that are unhealthy. I mean who really likes eating cabbage soup and hard boiled eggs all day? Not this girl, that's for sure!

One of my most favorite protein packed and "healthy" foods is Salmon. The color of preppy school boy shirts is also the fish of my dreams. Prepared in just the right way, not too cooked, not too raw, just right. Salmon can be prepared in countless ways, but the easiest and most delicious way is roasted. So simple, yet so scrumptious. Alas, I would be nowhere without my trusty rimmed baking sheet.

For new recipes I usually scout out the supermarket looking for inspiration, but for this one it was only with the ingredients in my refrigerator at the time. My mustard selection was looking particularly lonely and so I decided to whip up a Honey Mustard Salmon. Simple and satisfying. It's a taste we all know and love. I have had this kind of Salmon many times before BUT I had never made one myself. The addition of scallion was enough of a twist to send the flavor over the top. This Honey Mustard Salmon comes out so deliciously juicy and tender you'll want to make it every week! Let's get cooking!

Honey Mustard Salmon with Scallions

1 1/2 lbs. Fresh Salmon Filets
2-3 Tbs. Extra Virgin Olive Oil
1 Tbs. Dijon Mustard
1 Tsp. Whole Grain Mustard
1 Tbs. Honey
Freshly Cracked Salt and Pepper
3 Scallions, chopped

Preheat oven to 350 degrees. Place Salmon filets on parchment paper, on a baking sheet. Whisk together the Olive Oil, Mustards, Honey. Add Salt and Pepper and adjust to taste. Brush onto the Salmon filets. Next, chop the Scallions and scatter on top of the filets. Bake for 14-16 minutes depending on size of Salmon. I usually test for doneness by sneaking a bite from the thickest part of the fish (usually the middle). How easy was that?!



Served alongside this gorgeous Rainbow Quinoa, I'm feeling skinnier already!
