Hot and Sweet Roasted Chickpeas

Post-Costco I ended up with 6 cans of Chickpeas, aka, Garbanzos, aka what the hell to do with all these beans? The obvious answer might have been Hummus, but I rarely break out the food processor/blender as you might already know. I got to thinking about those bags of roasted chickpeas that they sell for like $5 at health food stores. All the different flavors they come in that I could surely replicate. Turns out I can. It is a ridiculously simply, addictive and yes, healthy snack!

You could make this recipe literally any time. There is no prep. I repeat NO PREP. You could also use any type of spice mix to flavor them. I've seen Ranch, Nacho, even Chocolate which I don't know I would be necessarily into but maybe? Either way, make it fun, make it spicy, make it your own or just use my recipe below! Serve it as a snack or an appetizer and watch people who say they "don't like chickpeas", devour them. Let's Get Snacking!

Hot and Sweet Roasted Chickpeas

2 Cans Chickpeas, rinsed and drained
1 Tbs. Extra Virgin Olive Oil
Freshly Cracked Salt and Pepper
1 Tsp. Hot Paprika (or smoked)
1 Tbs. Sweet Paprika
1 Tsp. Cumin
1 Tsp. Garlic Powder
1 Tsp Tumeric
Olive Oil Spray

Preheat oven to 450 degrees. Rinse and drain your Chickpeas. Lay them on a sprayed aluminum lined baking sheet. Drizzle with Extra Virgin Olive Oil. Next sprinkle on all of your spices. Mix together with clean hands. For optimal crispness, spray the chickpeas with Olive Oil Spray(or Pam) before putting them in the oven. Roast at 450 for about 30 minutes. Shake the pan halfway through cooking time to ensure even crispness. You should hear a popping sound when you shake them, that means they are almost ready. Leave in the oven until they are at your desired crispness. Mine were crispy on the outside and soft on the inside! Absolutely perfect little beans of goodness. Now who wants to buy a bag for five dollars?? Enjoy!
