Spiced Cauliflower with Truffle Curry Mayo

Few things in life are better than coming home to a semi-empty fridge and being able to whip up a kick ass dinner. A friend came to my house recently and saw my collection of spices and condiments. She was floored. How do you have so many condiments for just two people? Well first of all I explained to her that I rarely ever cook for just two people. I am constantly inviting people over and sometimes they just show up! Which I  don't mind because I can cook something up in less than 45 minutes AND make it nice enough to go on the blog!

After two days at the Restaurant Show in the Javits Center and Daylight Savings Time adjustments I was in no mood to go grocery shopping. I went home with no ideas for dinner whatsoever. I used my resources. Freezer, Fridge and Pantry. They never fail me. Since I didn't have any fresh protein like a meat or fish, I used vegetarian chorizo to top my pizza (dough from the freezer, of course). To make it a full meal though, I was going to need an interesting side dish. Cauliflower is one if my favorite roasted vegetables and that's just what I did with it. I can't tell you that my spice measurements are exact because I did not measure but you'll get the gist. One of my husbands favorite pairings for roasted cauliflower is curry mayo. I decided to bump it up just a bit with the addition of truffle salt and truffle oil. One taste and you'll be in love. Let's Get Cooking! 

Spiced Cauliflower with Truffle Curry Mayo

1 Head of Cauliflower
Extra Virgin Olive Oil
Freshly Cracked Salt & Pepper
Garlic Powder
Sweet Paprika 
Mustard Powder
Hot Chili Powder

For the Truffle Curry Mayo:

1/2 Cup of Light Mayo
2 tsp. Curry Powder 
1/2 tsp. Truffle Salt
1/2 tsp. Truffle Oil
Freshly Cracked Pepper

Preheat your oven to 450 degrees. Wash your Cauliflower and cut into even sized florets. Even sized florets equal even roasting-duh! Drizzle your florets with Extra Virgin Olive Oil. Season with Salt and Pepper. Add all other spices. They are listed in order of most to least used. Starting from about a teaspoon to half a teaspoon. It is not an exact measurement but don't worry, you can't mess it up. With clean hands, mix it all together and place on a prepared sheet pan and into the oven. 

Cauliflower will be ready in about 30-45 minutes depending in your oven. 

In the meantime, whip together your Truffle Curry Mayo by combining all ingredients.
Taste to ensure that it is exactly how you want it and 
don't blame me if you eat the whole thing in one sitting!
