Caramelized Onion & Saffron Scented Salmon

Ingredients:

1 Tbs. Neutral oil, such as Avocado Oil
4 small/medium yellow onions, thinly sliced
1 tsp. Cracked Sea Salt
1 pinch Saffron
1 tsp. Cumin
1 tsp. Turmeric
1 Side of Salmon (about 3-4 lbs.)
1 Tbs. Cumin Seed (optional)

Directions:

Heat up oil in a saute pan on Medium heat. Once shimmering, add your thinly sliced onions. Lower the heat and stir around constantly in order to prevent burning. Season the onions with salt. Continue to stir for about 15-20 minutes. If you have a longer amount of time you may lower heat even further and caramelize 30-40 minutes but don't take them too far because they will cook more in the oven with the fish. 



In the meantime, preheat oven to 350 degrees and set up a small bowl with 1/4 cup of hot water. Add the Saffron, Cumin and Turmeric to the water. When the onions are at an amber brown color and sticking to the pan after about 12-15 minutes, deglaze with your spiced water. Continue to cook the onions down until there is no more liquid left. Set the Salmon down on a tray lined with Parchment Paper. Cover Salmon with the Caramelized Onions and Cumin Seeds.



 Bake at 350 degrees for 25 minutes then broil at 500 degrees for 5 minutes. Salmon will be fully cooked throughout and onions will get slightly crispy and further browned on top. Enjoy!
