Sweet and Spicy Pepper Chicken Thighs

Sweet & Spicy Pepper Chicken Thighs



Ingredients:
6 Garlic Cloves
6 Chicken Thighs
2 Sweet Onions (Red or Yellow), quartered 
6 Mini Sweet Peppers, sliced in half with seeds removed
2 JalapeƱos, sliced into 1/2 inch circles

Topping Ingredients: 
1 Cup Fresh Chopped Cilantro
Juice of 1 Lime
2 Tbs. Honey
2 Tbs. Sweet Paprika 
2 Tbs. Cumin
1 tsp. Salt
1 Tbs. Extra Virgin Olive Oil, plus more for drizzling





Directions:

Preheat oven to 425 degrees. On an aluminum covered and cooking sprayed sheet tray lay out the 6 Garlic Cloves. Top each clove with a Chicken Thigh. Next lay the vegetables all around the chicken. In a small bowl mix together all topping ingredients. Top each Chicken Thigh with at least a teaspoon of the Honey Cilantro topping. Use a fork to ensure the topping gets on the whole surface area of the chicken. The chicken skin should be covered fully with the mixture. If there is extra after that, scatter it into the vegetables. Drizzle some Extra Virgin Olive Oil on all of the vegetables and some Freshly Cracked Salt if needed. Bake loosely covered in the oven for 45 minutes. Remove cover and bake another 15 minutes. Tops will be crispy but not burnt! Enjoy!
