Leftover Turkey Pot Pie
Ingredients
2 Frozen Pre-Made Pie Crusts
Veggies:
1 Tbs. Earth Balance
1 Yellow Onion, chopped
2 Carrots, chopped
2 Celery Hearts including the leaves, chopped
1 Sweet Potato (I used Japanese), chopped
1/2 tsp. Salt
1/2 tsp. Black Pepper
1 tsp. Italian Seasoning
Sauce:
3 Tbs. Earth Balance
3 Tbs. Flour
1/2 cup White Wine
1/2 cup Stock (veggie or chicken)
1 & 1/2 cup unflavored Soymilk
2 cups of Turkey, chopped or shredded
1 cup of Frozen Peas
1/2 tsp. Garlic Powder
1/2 tsp. Dried Thyme
Directions
Preheat oven to 375 degrees. Set a large, shallow heavy bottomed pot over medium high heat with Earth Balance. Once pan is hot start adding in the Onion, Carrot, Celery, Sweet Potato and spices. Saute for a few minutes until vegetables have softened slightly. Cover pot and cook for a few more minutes until the potato is soft enough to stick a knife through easily. Remove vegetables from the pan and set aside. Do not wipe out the pot. Add in the rest of the Earth Balance and heat until fully melted and bubble start to form.
