The Best Spanish Rice You've Ever Had - Instant Pot Recipe

Spanish Rice - Multi-Cooker Version

1 Small Yellow Onion, diced
1 tsp. Garlic, minced
1 cup Brown Rice
2 Tbs. Tomato Paste
2 Carrots, diced
1 tsp. Salt
1/2 tsp Pepper

Set your Multi-Cooker to 'Saute' mode. Add in Onion, Garlic, Rice, Tomato Paste, Carrots, Salt & Pepper. Saute for about 5 minutes until onion is softened and rice has taken on a bit of color. Shut off cooker.

1 & 1/4 cups Water
1 Tbs. Oregano
1 Tbs. Cumin
1 Tbs. Paprika
1 tsp. Salt
1/4 cup Crushed Tomatoes or Tomato Sauce
1 Tbs of Chili Powder or Crushed Red Pepper may be added if you like it spicy! (optional)

Combine all above ingredients and add into the cooker. Stir well with wooden spoon. Set to 'Rice' mode. This will take about 10 minutes (not including pressurizing time).

1 cup Water
1 cup Peas
1/2 cup Corn
1 4 oz. can Fire Roasted Diced Green Chiles

Open cooker slowly once pressure has settled and add in remaining ingredients above. Stir well again. Reseal and set cooker to 'Rice' mode one more time. Once done you can leave the rice inside the cooker to stay warm until serving. Alternatively you can take the rice out after about 5-10 minutes and fluff with a fork. Serve alongside your favorite Mexican meat or chicken dish! Enjoy!!
