The Ever-Changable Chicken Salad

Let's get real for a second. Leftovers? How amazing can they get? You have leftover veggies, meat and chicken. Your husband/children are only going to put up with you serving (can I even call it serving?) leftovers every so often. What if I told you there was a way to completely transform your leftover chicken into amazing-ness?! Well some of you I'm sure already know about the secrets of Chicken Salad. Growing up though I had never eaten a chicken salad. Our leftovers were always just that. Left. Over. While sometimes they were delicious, other times they were boring.

One day we had a particularly large amount of leftover chicken and I was feeling pretty adventurous. I decided that I would create my own chicken salad and guess what? It was a REVELATION! You can make chicken salad from just about anything. I repeat, anything! Do not start making a list and going grocery shopping because everything you need to put it this salad you should have and if you don't, use something else. It's that simple. Here's my take on a leftover chicken salad made from last night's barbecued drumsticks.

The Ever-Changable Chicken Salad

Leftover Chicken
1 Carrot
2 Stalks of Celery
1 Red Onion
About 10 Red Grapes
Handful of Craisins
Handful of Toasted Walnuts
Zest of 1 Lemon
1 Tablespoon of Rosemary

Dressing
2 Tablespoons of Light Mayo
Juice of 1 Lemon
1 Tablespoon of Dijon Mustard
Freshly Cracked S&P


To prepare the chicken simply cut into bite sized pieces. Dice all veggies and grapes. Combine all ingredients. Prepare the dressing directly over the chicken and veggies. Mix together and enjoy. 

Side Note- Chicken Salad will be most flavorful if you allow it to chill a bit in the fridge. Meaning you can make it in the morning and by dinnertime it will be at its most delicious! Enjoy.
