Round Two Recipe: Spicy Salmon Pasta

I love food, obviously, but in a world of food culture, Food Network, food everything, it's easy to forget that some people are just picky. Now, I absolutely hate a raw tomato but I try to be open and taste one every few years just to see if I still hate it. Turns out, I do. Other people just have their notions of what they like and don't like and they stick to it. I'm not going to be the first one to line up for a Tuna Casserole because that sounds super weird but chances are I would probably like it if it were made the right way (note: A LOT of cheese)
What I'm trying to say is that you shouldn't write off a recipe just because its not what you normally make. You should try it and see if you like it. Besides, the ingredients aren't that expensive. I once tried to make a Gnocchi I had seen on Giada and it failed miserably AND cost me $40. I had never made Gnocchi before and that was a fail but this recipe is definitely a winner, and you can make it with leftovers! I call that a win-win. Just think about how many times you've had leftover salmon in your fridge and nobody wanted to eat it. Now think about if that salmon had a selling point with hearty pasta, sweet veggies and a spicy kick...Sounds pretty delicious. Let's bump up those leftovers!

Spicy Salmon Pasta with Onion and Peppers

1 Tbs. Extra Virgin Olive Oil
1 Tbs. Butter
1 Small Onion or 2 Shallots, diced
2 Garlic Cloves, minced
2 Bell Peppers, any color, small dice
1/2 Tsp. Crushed Red Pepper Flakes
Freshly Cracked S&P
1/4 Cup of Dry White Wine 
1 Bag of Spinach or Arugula
1 Lb. Pasta (Any swirly kind)
1 Lb. Leftover Salmon
Parmesan Cheese (optional)

In a large pan heat up the Olive Oil and Butter, add the Onion and Garlic and sauté for 5 minutes. Add the peppers along with the spices and keep on medium heat for another 5 minutes. Deglaze the pan with White Wine. In the meantime set up a pot with salted boiling water for the pasta. Next add the greens to the pan until they are wilted. Once the pasta is al dente scoop it out of the water with a slotted spoon or pasta server. This way you get some of the pasta water into the pan for extra saucy, smoothness. After you've added the pasta to the veggies, add the leftover salmon and combine. Do not mix the salmon too much or it will fall apart. You are only adding the salmon at the end to heat it through. Once heated it's ready to serve, just add some Parmesan Cheese on top and Enjoy!
