Sweet Curry Tofu Sticks
Sweet Curry Tofu Sticks
Ingredients:
2 Packages of Extra Firm Tofu
2 tsp. Dijon Mustard
1 tsp. Fresh Minced Garlic
1 tsp. Freshly Cracked Salt
1 Tbs. Honey
1 Tbs. Curry Powder
1 Tbs. Cumin
1 Tbs. Turmeric
1 Tbs. Sweet Paprika
1/4 cup Extra Virgin Olive Oil
Directions:
Preheat oven to 450 degrees. Line a sheet tray with foil and non-stick spray. Cut Tofu into sticks by cutting in half lengthwise, then twice again on either side. Flip from the middle outwards and cut once straight through to make tofu into sticks*. Take as much water as you can out of the tofu sticks by patting them dry with paper towels**. Next, prepare the wet rub by combining Dijon Mustard, Garlic, Honey and all the spices. Slowly drizzle in the Olive Oil to the spice mixture while whisking to get an even rub. Brush the wet rub onto the tops and bottoms of the tofu. You can try getting on all sides but it is not necessary as it will fall down the sides during cooking. If you have any extra Olive Oil you can drizzle it on top. Bake the sticks for 35 minutes or until they start to brown and smell amazing. Enjoy!
*This method will only work with a an extra firm tofu. If you are using firm tofu, the sticks may fall apart. I would recommend only cutting into the 6 planks, not going the step further into sticks.
**If you are making this for children I find that it is not necessary to drain the tofu as much because your kids will not like it to be as dry/chewy. This is just personal preference but it is less work and tastes better for them!
